Serves: 4
Preparation Time: 5 minutes
Cook Time: 25 minute
Total Time: 30 minutes
Diet: Dairy-free, gluten-free
Ingredients:
1 onion, chopped (optional)
1 cup salsa
4 boneless, skinless frozen chicken thighs
1 cup dry basmati rice
Note: The Consumer Report found that California basmati rice was the least contaminated with arsenic. Lundberg Family Farms (a California company) is my favorite brand because they test their rice and publish the results for the public. Some grocery stores carry their rice or you can order it online.
Directions:
Saute chopped onion in Instant Pot until translucent (this is optional)
Pour salsa in Instant Pot. Arrange frozen chicken thighs in a single layer over salsa.
Cook on manual or pressure cook at high pressure for 12 minutes. Let pressure naturally release.
Carefully shred chicken with two forks in bottom Instant Pot. Toss to combine with pan juices and serve.
Cook rice separately and serve chicken mixture over rice
