Banana Brownies

Serves: 9 brownies

Diet: Dairy-free, gluten-free

Ingredients:

  • 1 1/2 cup mashed ripe bananas

  • 1/2 cup smooth cashew butter

  • 2 eggs

  • 1/2 cup cacao powder

  • 2 – 3 tbsp sugar (I prefer unrefined sugar - sucanat or panela) **, Optional

  • 1/4 tsp baking soda

  • 1 cup chocolate chips, divided

  • A pinch of sea salt, Optional

Directions:

  1. Preheat oven to 350°F.

  2. Mash ripe bananas in a large bowl.

  3. Add cashew butter and eggs, mix until smooth.

  4. Incorporate cacao powder, coconut sugar, baking soda, and a pinch of salt; mix well.

  5. Gently fold in 2/3 cup chocolate chips.

  6. Transfer batter to an 8×8 parchment paper-lined pan

  7. Bake for 20-22 minutes.

  8. Once cooled, cut into squares.
