40 Clove Healing Garlic Soup
We always make this soup when we feel a cold or flu coming on. It is so warming and healing! Enjoy!

Ingredients:
40 Cloves Of Garlic, Peeled
1/4 Cup Olive Oil, Divided
1 Medium Onion, Chopped
1 Medium Potato, Peeled & Chopped
4 Cups Organic Chicken Broth
1/2 Teaspoon Dried Thyme
Salt & Pepper To Taste
1 Tablespoon Lemon Juice
Directions:
1. Heat two tablespoons of olive oil in a large saucepan.
2. Preheat the oven to 350°F.
3. Place 30 garlic cloves in an oven-proof casserole, drizzle with the remaining olive oil, cover with foil, and roast for 35-40 minutes until soft and brown.
4. While garlic is roasting, coarsely chop the remaining garlic, and add it to the saucepan with onions and potatoes.
5. Cook the garlic, onion, and potato mix over medium heat until softened and lightly browned (around 5 minutes).
6. Add chicken broth, thyme, salt, and pepper to the saucepan, bring to a boil, then simmer until potatoes are very tender (15-20 minutes).
7. Let the soup cool to room temperature.
8. Once roasted garlic is golden brown, remove it from the oil and add it to the saucepan; reserve the garlic oil for later use.
9. Puree the soup in batches until thick and smooth, then return to the saucepan.
10. Reheat the soup and stir in lemon juice.
11. Serve the soup, topped with your preferred garnish.
