Healthy Gingerbread Cookies
Who says gingerbread is just for the holidays? Thanks to my Mom for the cookie cutter that Gordie found in the kitchen drawer, Gordie and I baked some healthy, low sugar, gingerbread men in March! Because why not spread a little holiday cheer all year round?
Recipe
Serves: 12 cookies
Preparation Time: 15 minutes
Cook Time: 10 minutes
Total Time: 25 minutes
Diet: Dairy-free, gluten-free, vegan
Ingredients:
1/3 cup oat flour
1/2 cup oats
1/4 cup ground flax seed
1/2 cup nuts of choice, finely chopped
1/2 tsp cinnamon and ginger
1/4 tsp cloves, nutmeg and allspice
1/2 tsp baking soda
1/4 tsp salt
1/3 cup nut butter of choice
2 tbsp maple syrup
1 tbsp molasses
1/2 tsp vanilla
1 egg (or flax egg for vegan)
Directions:
1. Preheat your oven to 375°F and line a baking sheet with parchment paper.
2. In a medium mixing bowl, combine oat flour, oats, flaxseed, nuts, cinnamon, ginger, cloves, nutmeg, allspice, baking soda, and salt.
3. In a small mixing bowl, whisk together nut butter, maple syrup, molasses, vanilla, and egg.
4. Pour the wet ingredients into the dry ingredients and mix until well combined.
5. Scoop the cookie dough onto the prepared baking sheet and flatten each cookie slightly, as they won't spread much during baking. Optional to use cookie cutter.
6. Bake in the preheated oven for 8-10 minutes or until the tops are set.
7. Enjoy your delicious gingerbread breakfast cookies!
