Banana Cashew Chocolate Chip Muffins

I'm thrilled to introduce this fresh muffin recipe using bananas, cashew butter, and almond flour! I bake these often because they are a delicious, healthy, and convenient snack/ meal addition that are easy to grab out of the fridge. Gordie loves them, and so do Lex and I!

These muffins are beautifully moist and packed with flavor. The almond flour brings a delightful nuttiness, while the bananas add just the right amount of gentle sweetness.

They're a breeze to make and require just one bowl—hello, easy cleanup!

And the best part? They're both gluten-free and dairy-free!

Recipe

Serves: 8 muffins

Preparation Time: 10 minutes

Cook Time: 15 minutes

Total Time: 25 minutes

Diet: Dairy-free, gluten-free, (can be vegan)

Ingredients:

  • 1 egg or flax egg

  • 1/2 cup cashew butter (or your favorite nut butter)

  • 1 tsp vanilla extract

  • 2 large bananas, mashed

  • 1 Tablespoon coconut sugar or panela

  • 1/2 tsp salt

  • Dash cinnamon

  • 1 cup almond flour

  • 1 tsp baking soda

  • handful of chocolate chips

Directions:

  1. Begin by preheating your oven to 350 degrees F. Take a muffin pan and line it with 8 muffin liners (or spray with oil). Keep this prepared pan aside.

  2. Take a medium-sized bowl and whisk together the egg, cashew butter, vanilla, mashed banana, coconut sugar, salt, and cinnamon.

  3. Now, switch to a rubber spatula and gently incorporate the almond flour and baking soda into the mixture.

  4. Mix in chocolate chips or add them to the top of the muffins.

  5. Using a large spoon, distribute the batter evenly among the 8 lined muffin cups. Optionally, for an appealing presentation, you can place an additional slice of banana on top of each muffin.

  6. Place the muffin pan in your preheated oven and bake for approximately 15 minutes or until the muffins spring back lightly when touched on top.

  7. Once baked, allow the muffins to cool in the muffin tin for around 5 minutes. Then, carefully remove them from the pan and they're ready to be served!
