Shona’s Curry: Nourishing Gut-Healing Curry with Rice

Every week, I joyfully embark on the ritual of crafting my special curry with rice—a comforting embrace for my soul and a healing balm for my gut. This delicious symphony of flavors, carefully curated with spices and aromatic herbs, has become a cornerstone in my self-care routine, especially when my gut craves a bit of extra love.

Not only is this dish a personal sanctuary, but it has also become a celebration shared with company. Family and friends often request this heartwarming creation, and there's a collective joy that fills the air when I decide to prepare it. The rich warmth and deliciousness of this curry spark a unique celebration, turning each shared meal into a nourishing experience for all.

Recipe

Serves: 8

Total cook time: 45 mins

Diet: Gluten free, dairy free, can be vegan if substitute meat for more vegetables/mushrooms/tofu

Ingredients:

  • 2 cups dry basmati rice

  • 2 lbs ground meat

  • Ghee (or other cooking oil)

  • 1 tsp mustard seeds

  • 1 tsp cumin seeds

  • 1 tbs ginger, grated or powdered

  • 1 onion, diced

  • 4 carrots, chopped

  • 1 head of broccoli, chopped

  • 2 cans of coconut milk

  • 1/4 cup ground turmeric

  • 2 tbs ground cumin

  • 2 tbs ground coriander

  • 1 pinch chili powder

  • Salt & pepper to taste



Directions:

  1. Cook the rice separately.

  2. Cook the ground meat in a separate pan.

  3. In a big wok, put 1 tbs of cooking oil, the mustard seeds, and cumin seeds - cook on med/low until fragrant.

  4. Add the ginger and cook another min on med/low. You can add some chopped garlic if desired.

  5. Add the onion, carrots, and broccoli. Sauté until softened.

  6. Add the coconut milk, spices, and meat to the wok. Stir and cook for 8 mins or until the vegetables are cooked to your liking.

  7. Serve over rice.
